Mt Tam tartine, fig + Raeburn red wine jam, prosciutto di Parma
1 cup dried black mission figs
2 cups Raeburn Pinot Noir
1 cup sugar
1 sprig rosemary picked and chopped
a pinch red chili flakes
rustic bread, sliced
1 wheel Cowgirl Creamery Mt.Tam cheese
6-8 thin slices prosciutto di Parma
Extra virgin olive oil
kosher salt to taste
To make the fig + red wine jam, In a sauce pan on medium high heat, bring figs, red wine, sugar, chili flakes, and rosemary to a simmer until figs are softened, about 20 minutes. Blend in a blender. Season to taste with salt.
Sauté bread slices in olive oil on medium heat until golden. Smear with fig +red wine jam. Thinly slice Mt Tam and place on each toast. Arrange ribbons of prosciutto on each toast. Drizzle with quality extra virgin olive oil. Plate & serve.
